The one thing never to do is fit DOT 5, which is silicone-based rather than glycol-based. It is not compatible with the seals in an ABS system and it will not mix with what is already in the car. DOT 5.1, confusingly, is glycol-based and is compatible — but there is no reason to use it in a road car.

Every two years, or 40,000 to 60,000 km, whichever arrives first — and the time limit is the one that matters, because fluid absorbs moisture whether the car is driven or parked.
